If you haven’t had rice pudding yet, you should definitely give it a chance. When served warm, rice pudding is a real treat. From the cinnamon and brown sugar, it’s full of comforting aromas and flavors! Rice pudding can be served cold in the summer to provide a cool and sweet treat.

Easy Recipe Rice Pudding

A baked rice pudding recipe is the ultimate comfort food from your childhood. It’s simple cooking at its best. It’s rich and creamy with a golden top. The basic recipe is very simple to make. All you have to do is mix and bake, then eat it on its own or add your own toppings and flavors.

To Make Rice Pudding you’ll need the following ingredients

  • 2 1/2 cups (600 ml) whole milk
  • Pinch salt
  • a single large egg
  • uncooked short-grain white rice, 1/3 cup (66 grams)
  • dark brown sugar, packed 1/4 cup (50 grams)
  • 1/4 teaspoon cinnamon
  • Raisins, 1/3 cup (40 grams)
  • 1 teaspoon vanilla extract

How To Make a Rice Pudding

  • Using milk, cook the rice:
    Bring the milk, rice, and salt to a boil in a heavy-bottomed saucepan over high heat. Reduce heat to low and simmer partially covered for 20-25 minutes. Stir frequently to avoid rice sticking to the pan.
  • Temper rice mixture with egg, brown sugar, and vanilla extract:
    In a small bowl; Whisk the egg and brown sugar together until they’re well mixed. When the egg mixture is ready, add a half cup of the hot rice mixture to it, a tablespoon at a time, whisking vigorously to make sure everything is mixed together.
  • Add tempered egg mixture back to rice mixture:
    In a small saucepan, add the egg mixture, then the rice and milk. For about 5 to 10 minutes, stir the mixture on low heat until it is thick and the rice and milk are at about 160°F (71°C).

All done for our rice pudding!

Homemade Recipe Rice Pudding

Note:

Make sure the mixture doesn’t come to a boil at this point, or it will turn into curds. Remove the pan from the heat and stir in the vanilla, raisins, and cinnamon, then turn off the heat. Serve hot or cold.

Tips for Best Rice Pudding

  • For a creamy texture, choose Arborio and pudding rice, which are types of rice with short grains.
  • Stir the pudding every so often while it’s cooking to make sure the heat is spread evenly and to keep it from sticking.
  • You can change how sweet it is by adding more or less sugar, depending on your taste.
  • If the pudding gets too thick, add a little more milk to thin it out.

  • Place rice and milk in a small saucepan and whisk the egg mixture into it for 5 to 10 minutes, or until it reaches a thickening temperature of 160°F (71°C).

Notes

As the rice pudding cools, it will get thicker. When it’s warm, it might look a little bit loose. When it’s cold, it will be very thick.
