How to Smoke Beef Short Ribs :

Instructions :

  1. PREHEAT: Make sure the smoker is running at 225 degrees F so it can smoke.
  2. TRIM: Make sure there isn’t any silver skin on the meat and cut off the fat.
  3. SEASON: First, spread brown mustard on the ribs. Then, add some Beef Seasoning to the ribs 
  4. SMOKE: Smoke these short ribs for three hours.
  5. SPRITZ: Starting at the 3-hour mark, spritz your ribs with beef stock every hour.
  6. Rest: Remove the ribs from the smoker when the meat is at least 205-210 degrees F inside. Let them rest for 30 minutes.
  7. Serve .

Ingredients
  

  • 2 - 3 Racks Pork Ribs 

BBQ Rub

  • 2 tsp onion powder
  • 2 tbsp. dark brown sugar
  • 2 tbsp. salt
  • 2 tbsp. black pepper
  • 2 tsp  garlic powder
  • 2 tsp dry mustard
  • 2 tbsp. smoked paprika

Mop Sauce

  • 2 tsp Cholula Sauce
  • 3 tbsp. unsalted butter
  • 1 cup apple cider
  • 3 tbsp. soy sauce

BBQ Sauce

  • ½ cup apple cider vinegar
  • 1 cup ketchup
  • ½ tsp course ground pepper
  • 1 tsp Worcestershire
  • 2 tbsp. bourbon
  • 4 tbsp. mustard
  • 4 tbsp. dark brown sugar
  • 1 tsp sea salt
  • 3 tbsp. honey

Instructions
 

Preparation of Ribs

  • Make sure the ribs are clean and dry. Then peel the membrane from each one of them.
  • Combine all of the rub ingredients in a small mixing bowl and spread a thin layer on both sides of each rack. Rub into the flesh gently. Refrigerate for 4 hours or overnight, covered.
  • Remove the ribs from the refrigerator and leave aside for 30 minutes to come to room temperature.
  • Preheat the grill to 250 degrees Fahrenheit. Fill the drip pan with water until it is half full. Wood chips should be placed in the wood chip chamber (hickory or apple).
  • Place the rib racks in the smoker, close the door, and set the temperature to 225 degrees Fahrenheit. 4 hours in the oven For the next 4 hours, don't open the door or check the ribs.
  • Prepare the mop sauce and barbeque sauce in the meantime.
  • Mop the ribcage every 30 minutes for the next two hours after four hours.
  • Place the ribs in a deep metal pan after removing them from the smoker. Return to the smoker for another 2 hours, covered securely with aluminum foil.

Mop Sauce

  • In a small saucepan over medium heat, melt the butter. Bring the apple cider, soy sauce, and spicy sauce to a low simmer. Maintain a warm temperature and use to baste/mop the ribs as needed.

BBQ Sauce

  • In a medium saucepan, combine all ingredients and bring to a boil over medium high heat.
  • Reduce heat to low and cook for 45 minutes, or until desired consistency is achieved.

Notes

  • Set the ribs out of the refrigerator for 30 minutes before smoking to allow for more consistent cooking and smoke penetration.
  • Mopping the ribs after a good bark has formed will keep the ribs wet and tender for the remainder of the cooking period. Don't skip this stage; you'll be pleased with the outcome.
