Boiled custard Recipe
Ingredients
- 500 ml double cream (500ml =2 cups)
- 500 ml whole milk (500ml =2 cups)
- 10 ml vanilla paste or extract (10ml =2 tsp)
- 125 ml granulated sugar (125ml = 1/2 cup)
- 5 large egg yolks
- whipped cream optional
Instructions
- Add the cream, milk, and vanilla to a saucepan and mix well. Boil then turn off the heat.
- Mix the sugar and egg yolks in a large bowl until they are pale in color and double in size.
- Temper the hot milky mixture into the sugar yolk mixture by slowly adding about 60ml (1/4 cup) at a time, whisking to spread the heat. The milky mixture should be mixed in with half of it. Then, add the rest of it back into the saucepan.
- Place the saucepan on a low flame. Keep stirring until the mixture is the consistency of a pancake, or 80°C (180°F) on a kitchen thermometer.
- Remove the custard from the heat and pour it into a large bowl. Mix it well. Then, put the bowl in icy water and stir it until the custard is cold.
- You can drink it when it has cooled to the proper serving temperature.
- Grate some nutmeg over the whipped cream before serving. Enjoy!
