Ingredients
  

  • 2 chicken breasts
  • 1 onion diced
  • 4 carrots peeled and sliced into rounds
  • 2 stalks celery diced
  • 2 medium russet potatoes peeled and diced
  • 1 bay leaf
  • 2 tsps salt
  • 1 tsp minced garlic
  • ½ tsp dried thyme
  • 1 tsp corn starch + 1 tablespoon cold water
  • ½ tsp poultry seasoning
  • 4 cups low-sodium chicken broth or chicken stock

Instructions
 

  • Throw everything in the crock pot except the corn starch and parsley.
  • Cook for 6-8 hours on low heat, or until chicken is falling apart.
  • Shred the chicken. Meanwhile, stir together the corn starch and water in a cup. Stir into the crock pot. And stir in the chicken.
  • Cook for another 30 minutes before serving, garnished with fresh parsley on top.
