Dirty Rice is a spicy and meaty side dish with ground beef and chicken livers.

“Dirty” refers to the fact that the rice dish is made with minced chicken liver or chicken gizzards, which impart a crispy, browned flavor to the rice and make it one of your favorite rice dishes of all time, The Holy Trinity of onion, celery, and bell pepper give Dirty Rice its flavor. The seasonings are completed with garlic, dried thyme, and a few teaspoons of Cajun seasoning.

To make dirty rice recipe you’ll need the following ingredients:

  • 1 can chicken broth (14 ounces)
  • 1 bay leaf
  • 1/2 pound ground beef
  • 1 1/2 cups rice (long grain)
  • 1/2 green bell pepper, (seeded and chopped)
  • 1 tbsp bacon grease or Vegetable oil
  • 1/2 cup finely chopped chicken livers
  • 2 cloves garlic, (minced)
  • 1 medium onion, (chopped)
  • 1 celery rib, (chopped)
  • 2 tsps cajun seasoning
  • 1/4 tsp dried thyme
  • 1/2 tsp salt

Note:

To get your dirty rice more spicier, Use green bell peppers if you want a relatively mild result. If you are looking for something spicier, use jalapeño chili peppers.

How to make dirty rice:

Dirty Rice is a spicy and meaty side dish with ground beef and chicken livers.
  1. Place the remaining chicken broth in a medium saucepan and set aside 1/2 cup of it. 1 1/2 cups water, plus a bay leaf Bring the water to a boil. Cook for 20 minutes after adding the rice and covering it.
  2. In a cast iron Dutch oven, heat the bacon grease. Add ground beef and use a wooden spoon to break it up.
  3. After the ground beef is ready, add the onion, celery, and green pepper. Cook until the beef is no longer pink and the vegetables have softened, stirring occasionally. Cook for another 5 minutes after adding the chicken livers and garlic.
  4. Add salt, Cajun seasoning, and thyme.
  5. Add the reserved chicken broth and scrape up any brown bits stuck to the bottom of the pan. Let it simmer for a minute.
  6. Remove the bay leaf from the rice and place it in a Dutch oven. you should mix into the ground beef mixture. While stirring, keep the heat on. Remove from the heat once everything is well combined.
  7. Serve and enjoy your healthy dirty rice

Notes

A little bacon grease from cooking bacon can be used in this rice. It will make the flavor even better.
