When you make this copycat broccoli cheddar soup, there’s not even a need to go to a well-known bread company. This soup is smooth, rich, and full of great broccoli cheese flavors. You can make it in just 30 minutes on your stovetop!
To make broccoli cheddar soup recipe youβll need the following ingredients :
- 4 tbsp. butter
- 1 medium onion, chopped
- 2 celery stalks, thinly sliced
- 3 c. low-sodium chicken broth
- 1/4 c. all-purpose flour
- salt
- Black pepper, freshly ground
- 3 cup shredded cheddar cheese, plus additional for garnish
- 1 large head broccoli, finely chopped
- 2 c. whole milk
- 1 large carrot, grated
- Baguette, for serving
How to make this lovely Soup:
- Melt butter in a large pot over medium heat. Cook the onion and celery for 5 minutes or until soft. After a minute of whisking in the flour, remove from heat and stir in the milk. Add salt and pepper to taste as you gradually add chicken broth.
- Add the broccoli and carrots and mix well. Bring to a boil, then reduce to a low heat. Cook for 20 minutes, or until vegetables are tender.
- Stir in the cheddar after slowly adding the milk and bringing it to a simmer.
- Season with salt and pepper, then add more cheese. Serve baguette with the meal.
Note :
As long as you don’t add too much broccoli, you can get some extra veggies in there. If you haven’t had enough broccoli and cheese, we think you should try broccoli cheesy bread. For serving, we like to dip some homemade garlic bread into the soup.
If you have any leftovers (which we doubt), store them in an airtight container in the refrigerator for 3β4 days or in the freezer for up to 6 months.
